Zesty Lemon Red Potatoes

  • 2 medium red potatoes, cut into 1/2 inch cubes
  • 1 tsp minced fresh parsley
  • 2 tsp olive oil
  • 1 tsp lemon juice
  • 1/2 tsp grated lemon peel
  • 1/4 teaspoon salt
  • 1/8 tsp pepper

Directions:
  1. Place potatoes in a saucepan and cover with water. Bring to boil; cook until tender.
  2. Combine the remaining ingredients in a mixing bowl.
  3. Drain potatoes; add lemon mixture and toss to coat.
