- 2 large sweet potatoes
- 2 TBS reduced-fat butter
- 2 TBS brown sugar
- 2/3 cup cubed fully cooked lean ham
- 2/3 cup cheese
Directions:
- Prick sweet potatoes with a fork; microwave on high for 4-5 minutes or until tender.
- Cut a thin slice off the top of each potato and discard. Scoop out the pulp, leaving a thin shell.
- In a bowl, mash the pulp with butter.
- Stir in brown sugar, cheese and ham.
- Spoon into potato shells.
- Place on baking sheet. Broil 4-6 inches from heat for 3/5 minutes or until browned and heated through.
