Chelsie's Sugar Cookies



Do you want to make the best sugar cookies in the world? Look no further! I have a recipe for sugar cookies that will blow your socks off.

...that is, if you are into sugar cookies that are unbelievably soft and thick and
melt in your mouth.
Seriously...these are amazing.
{The trick is to roll them out thick and bake them for less time than you think they need.}

You'll need:


1 cup butter
2 cups sugar
2 eggs
3 tsp. vanilla
1 cup sour cream
1 tsp. salt
2 tsp. baking soda
5 1/2 cups flour

In mixer, cream butter and sugar, and then add eggs and vanilla. Add sour cream. Combine salt, soda, and flour, and add to mixture.

Roll out on floured surface to about 1/4 to 1/3 inch thick. Really.





It saves time to have cute little six-year-old hands helping you pick up the scraps.

Use a spatula to carefully slide under each cookie and place onto greased (with Pam) parchment-lined cookie sheets. Bake at 375 for 7-8 minutes.
THEY WILL NOT LOOK DONE!
But don't give in to your temptation to cook "just a little bit longer" or you will get crunchy cookies instead of soft, pillow-like cookies.
This is what mine look like when I take them out of the oven:

They are still very pale and have no browning anywhere. If you have a golden brown color along the edges then you have baked them too long.

Wait about 5 minutes and then transfer carefully to a cooling rack. If you wait longer they will get soggy on the bottom and sometimes get stuck to the parchment paper.

Once they are cooled they are ready for frosting.

Note: I know that there are people who make amazingly beautiful iced sugar cookies.
I am not one of them.
I've seen some sugar cookies out there that are smooth, glossy, beautiful pieces of art. For those of you who have the talent and patience to make such beautiful masterpieces...I envy you on many levels.
But me?
I prefer cookies that taste good and I don't really care so much about what they look like. The one time I made royal icing I thought it ruined my sugar cookies. Just my two bits.

Here is the simple buttercream frosting I use:
1/2 cup butter, softened
4 cups powdered sugar
2 tsp vanilla extract
1/4-1/3 cup milk
In a mixing bowl, cream butter. Beat in sugar and vanilla until crumbly. Gradually add milk until frosting reaches desired consistency. Add desired food coloring.

And there you have it. Heaven on a plate. This recipe makes about 30 extra large cookies (like I have here) or up to 4 dozen smaller cookies.

Plate some up and take them to your neighbors to wish them Luck o' the Irish.

Amanda Sugar Cookies

  • 1 cup margarine/butter
  • 1 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup sour cream
  • 5 cups flour
  • 2 tsp baking powder
  • 2 tsp salt
cream together maragine and sugar, beat in eggs and vanilla and sour cream. Combine flour, baking powder and salt, stir into cream mixture.
Dough kind of light and sticky.
Mix in the morning and let sit in fridge for 2 hours, then roll out dough and cut.
Bake at 350 8-10 or until light brown

Best Chocolate Chip Cookies EVER

BEST-EVER Chewy Chocolate Chip Cookies

Best-Ever Chocolate Chip Cookies
barely adapted from Anna Olson, Food Network Canada

Ingredients:
3/4 c. unsalted butter, softened
3/4 c. brown sugar
1/4 c. granulated sugar
1 egg
2 tsp. vanilla extract
2 c. all purpose flour
2 tsp. cornstarch
1 tsp. baking soda
1/2 tsp. salt
1 c. bittersweet chocolate chips

Directions:
1. Preheat oven to 350 degrees F.

2. In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.

3. Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.

4. Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet. Bake for 8-10 minutes, until barely golden brown around the edges. (The tops will not brown, but do NOT cook longer than ten minutes.)

5. Let cool, on the sheet, on a wire rack for five minutes. Remove from baking sheet and let cool completely. Makes approximately 3 dozen. Try not to eat them all.

Homemade Oreo Cookies


Cookie Recipe
1 package devil's food cake mix
2 - eggs
1/2 - cup oil
(or butter flavored shortening)
Heat oven to 350 degrees. Add oil and eggs to cake mix and blend together. Roll dough into balls (a little larger than a quarter). Place on greased cookie sheet. Bake for 8 minutes. Remove from oven and let cool on sheet (until warm).

Remove cookies from baking sheet and place on cooling rack.To assemble the cookies, in a pastry bag with a 1/2 inch, round tip (you can always use a zip lock bag with a round tip or just use a butter knife)add about a tablespoon of filling into the center of one cookie.

Place another cookie similar in size on top of the filling. Lightly press, to work the filling evenly to the outsides of the cookie. Continue this process until all the cookies have been sandwiched with cream.


Cream Cheese Filling Recipe

1 - stick butter (1/2 cup)
1 - 8oz package philly cream cheese or generic
3-4 cups - confectioner's sugar (depending on desired consistency)
1 - tsp vanilla extract

Cream butter and add cream cheese and mix well. Add vanilla extract and confectioner's sugar. Mix slowly until you reach your desired consistency.


Vanilla Cream Filling Recipe:

1/4 cup (1/2 stick) room-temperature, unsalted butter
1/4 - cup vegetable shortening
2 - 3 - cups sifted confectioners’ sugar
2 - teaspoons vanilla extract

Cream butter and shortening together. Add vanilla extract and confectioner's sugar slowly until you reach your des
ired consistency.

YUMMY Chocolate Chip Cookies

Mix:
1 cup butter flavored Crisco
1 cup brown sugar packed well
2 eggs
1/2 cup sugar
1 tsp vanilla

In a separate bowl mix:
2 cups flour
1 tsp baking soda
1 tsp salt
Lightly mix together then dump that in to the rest of your ingredients mix
1 bag chocolate chips

Bake at 350 for 12 min or until lightly brown. You don't need to spray pan.
Cookies come out soft looking just cool them on rack and ENJOY

(Tried butter and plain crisco and it does NOT work)

Julie's Pumpkin Cookies

1 c shortening
1 1/2 c sugar
1 1/2 c brown sugar
4 eggs
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
2 tsp nutmeg
2 tsp cloves
2 tsp ginger
1 tsp all spice
1 tsp salt
3 cups pumpkin
nuts (optional)
raisens (optional)
chocolate chips
4 1/2 c flour

Bake @ 350 for 12 minutes

Easy Pumpkin Chocolate Chip Cookies

  • 1/2 cup pumpkin
  • 1 cup Spice cake mix
  • 1/3 cup chocolate chips

Preheat oven to 400 degrees. In a medium mixing bowl, stir together pumpkin and cake mix until smooth. Stir in chocolate chips. Drop by rounded Tablespoons onto an ungreased cookie sheet. Bake 10 minutes or until firm and no longer gooey. Makes about 12 cookies.

*If you make your cookies very big, they will take too long to bake. If you are not in a hurry, bigger cookies are okay.

Home Made Pumpking Chocolate Chip Cookies

  • 1 (14 oz) can pumpkin
  • 2 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 tsp milk
  • 2 tsp vanilla
  • 1 tsp salt
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 4 cups flour
  • 4 tsp baking powder
  • 1 (12 oz) bag of chocolate chips

Directions:
1. Mix all ingredients except flour and baking powder.

2. Mix flour and baking powder then mix them to the rest.

4. Put in chocolate chips after all ingredients are mixed together.

5. Bake at 375 for 10 mins

*They bake the same size as you put them on cookie sheet

Andes Creme de Menthe Chunk Cookies

  • 1/2 cup salted butter, softened
  • 3/4 cup dark brown sugar
  • 1/2 cup white sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp vanilla extract
  • 2 eggs
  • 1 pks (10oz) Andes Creme de Menthe Baking chips
  • 2 2/3 cup sifted all purpose flour

Directions:
1. Blend butter, sugars, baking soda, baking powder, vanilla and eggs until mixed.
2. Stir in Andes Baking chips and then flour.
3. Chill for about 1 hour in fridge.
4. measure out about 1 oz of dough, form a ball and slightly flatten.
5. Raise oven rack on level above middle and bake on non-stick baking pans.
6. Bake at 350 for about 8-10 minutes. Leave on pan for about two minutes before removing.

Makes about 4 dozen cookies

Peppermint Crunch Cookies

  • 1/2 cup shortening
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 2 eggs
  • 1 tsp. Baking powder
  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 2 cups oatmeal
  • 1 cup coconut
  • 1 cup Andes Peppermint Crunch baking chips

Directions:
1. Cream shortening, butter and sugars.
2. Add eggs and vanilla, mix well.
3. Add dry ingredients, mix well
4. Stir in oatmeal, coconut, nuts and peppermint chips.
5. Roll into a ball and slightly flatten on an ungreased cookie sheet.
6. Sprinkle some remaining chips on the top of each cookie.
7. Bake at 350 for 8-10 minutes

Makes 3 dozen cookies.

Monster Cookies

  • 6 eggs
  • 2 1/4 cup brown sugar
  • 2 cups sugar
  • 1/2 TBSP vanilla
  • 4 tsp baking soda
  • 1/2 TBSP corn syrup
  • 1/2 lb. butter
  • 3 cups peanut butter
  • 8 cups oatmeal
  • 1/2 lb each: M&M's and Chocolate Chips

Mix all together
Bake @ 375 for 7-8 minutes

Grandma's Cookies

*Tip: Don't over cook
*Tip: Makes 12-13 dozen!

  • 1 1/2 cup shortening
  • 1 cup white sugar
  • 2 cups brown sugar
  • 4 eggs
  • 1 cup milk
  • 1 can applesauce (size of can of beans)
  • 2 tsp baking soda
  • 5 cups flower
  • 2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 6 cups oatmeal
  • 12 oz chocolate chips

Directions:
1. Cream shortening, sugar and eggs
2. Add milk
3. Add soda to applesauce and pour into mixture.
4. Sift in dry ingredients together. Add to mixture.
5. Add oatmeal, and stir in chocolate chips.
6. Bake at 375 for 10-15 minutes

Chocolate Chip Cookies

  • 2 cups brown sugar
  • 2 cups white sugar
  • 4 sticks of butter
  • 4 eggs
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp vanilla
  • 6 1/2 cup flower
  • 2 pkg of chocolate chips

Directions:
1. Cream white sugar, brown sugar, butter.
2. Add eggs and vanilla
3. In a separate bowl sift: cinnamon, baking powder, baking soda, vanilla and flour. Once all sifted add to liquid mixture.
4. Add chocolate chips
5. Bake at 375 for 8-10 minutes

No Bake Peanut Butter Cookies

  • 2 cups sugar
  • 1/2 cup margarine
  • 1/2 cup milk
  • 3 cups rolled oats
  • 6 tsp baking cocoa powder
  • 3/4 cup peanut butter
  • 1 tsp vanilla

Directions:
1. Mix sugar, margarine and milk in a sauce pan, boil for 1 minute only.
2. Then mix oats and cocoa powder to mixture in #1.
3. Add peanut butter and vanilla to the rest of mixture. Spoon out on wax paper, let sit

Rollo Cookies

  • 2 Devils Food cake mixes
  • 3/4 cup oil
  • 4 eggs
  • 1 large bag of Rollo's


1. Mix the cake mix, oil and eggs until all blended.

2. Take a spoon full of cookie mix flatten, add roll to middle and surround it with cookie mix.

3. Set on greased pan bake at 350 for 10-12 minutes.
